Sourdough Waffles with Toasted Pecans + Bourbon Whipped Cream
If you are looking for other ways to use your sourdough starter other than bread - these sourdough waffle will blow you away. The toasted pecans and touch of bourban are a flavor match in heaven and elevate this waffle recipe to new levels. However, if you are allergic or don't have bourbon lying around, we highly encourage you to still make this recipe. Try topping it with fresh fruit, jam, or farmers market honey.

Ingredients
Overnight Starter Mixture
240g1 cupLeftover Sourdough Starter
120g½ cupGreek yogurt
120g½ cupButtermilk
240g1 cupUnbleached all purpose flour
2tbspGranulated sugar
Next Morning Batter
56g¼ cupNeutral oil Melted butter can be subsituted but using oil will crisp up your waffles more than butter. If you like really light and crispy, there is no comparrison (oil is the way to go).

5g1 tspBaking soda
5g1 tspCinnamon
3g½ tspSalt
3g½ tspVanilla extract real vanilla bean is pricy but if available, add it hear
2g¼ tspNutmeg (optional)
Bourbon Whipped Cream
340g1½ cupHeavy Whipping Cream
52g¼ cupgranulated sugar
15g1 tbspbourbon ...or more
5g1 tspvanilla
Instructions
Overnight Starter mixture
Combine leftover starter, flour, greek yogurt, buttermilk, and sugar in a bowl. Mix until all ingredients are incorporated, cover and leave at room temp overnight.
Next Morning batter
Chop pecans and toast in a small skillet over medium heat until fragrent. Allow to cool.
Mix vanilla, egg, cinnamon, nutmeg, and neutral oil in a small bowl. Combine with the starter mixture before adding the toasted pecans, salt, and baking soda.
Spray a heated waffle iron with netural cooking spray on both sides before laddeling your waffle batter. Cook until crispy and deeply golden
Top with all natural maple syrup and bourbon whipped cream

Combine heavy cream, bourbon, vanilla, and sugar in a small bowl. Using an electric or stand mixer, beat the mixture until soft peaks form
